Cooking outdoors for 60 guests
In this event, the biryani was cooked underground in a tandoor oven (supersized clay pot). Layered with various types of meat that were marinated overnight - 2 lamb legs, 2 beef ribeyes, and 8 hanging chickens. The juices converged from all the meats creating a matrix of flavours that was doused over a bed of Paluf rice.
Asado Full Goat in the mountains
Inspired by the famous grilling method of the Argentinian Asado, this full goat had been bathed in a salt brine bath for 24 hours before being mounted onto the spit. The indirect heat allows for a 5-6 hour slow cook with consistent spiced watering to keep the meat juicy and tender.
Rock oven hanging leg of lamb
Using rocks from the surrounding mountains, we built a concave-shaped makeshift oven. Keeping the fire at the base of the rock,the wall maintains an indirect heat source that reflects back to the spinning meat cuts that are suspended on hooked strings. This slow cook technique requires minimal attention, allowing me to focus on other meal prep.
Xmas Turkey buried in the desert sand
Sand being a great insulator of heat, this method of cooking retains the heat and more importantly keeps the juices with no where to go. Hence, leaving your chosen meat dish super succulent as it cooks within its own juices. For poultry, I advise using a thermometer probe to ensure the meat is fully cooked to the desired internal temperature. Fire protective gloves are also worth having close by!
